The evening begins with a canapé of crispy bacon and goat cheese croquettes paired with Rosé of Pinot, followed by dishes including Dungeness crab with caviar, sesame-crusted bluefin tuna with shrimp dumpling and dashi, pork tenderloin “saltimbocca,” and crispy Snake River Farms Wagyu short rib. The dinner concludes with a pineapple and almond frangipane brûlée dessert paired with late harvest Riesling. \nGuests can also extend the experience with an exclusive overnight rate at Hotel San Luis Obispo for the evening of the dinner. \n
